Nutty Bacon Cheese Ball

ingredients

  • 1 pkg cream cheese, softened
  • 1/2 cup milk
  • 2 cups shredded cheddar
  • 2 cups shredded Monterrey Jack
  • 1/4 cup crumbled blue cheese
  • 1/4 cup finely chopped green onions
  • 10 slices bacon, cooked and crumbled
  • 3/4 cup chopped pecans
  • salt & pepper to taste
  • 1/4 cup fresh parsley, minced
  • 1 tbsp poppy seed

directions

Beat cream cheese and milk in a large bowl until well blended. Stir in cheeses. Add green onions, half of the bacon, half of the pecans, salt and pepper. Beat at medium speed until well mixed. Transfer half of the mixture to plastic wrap and shape into a ball. Wrap tightly and refrigerate for at least 2 hours. Repeat with other half of mixture. Combine remaining bacon, pecans, parsley, and poppy seeds in a large shallow dish. Roll each ball in mix until well coated. Wrap tightly and refrigerate until serving, up to 24 hours.
