Mexican Cornbread Casserole
ingredients
- 1 lb ground beef
- 1/4 cup chopped onion
- 1 teaspoon salt
- 2 Tblspoons jalepeno pepper chopped
- 2 eggs
- 1 can cream style corn
- 2/3 cup milk
- 1 pkg jiffy cornbread mix
- 1 or 2 cups shredded cheddar cheese

Mix the beef, onion, salt and peppers in a skillet and brown.

Set aside.

Beat the eggs in a medium sized bowl.

Add corn, milk, and cornbread mix and mix together.

Pour 1/2 of the batter into a greased 9 inch square pan.

Add the beef at the next layer.

Layer the cheese on top of it.

Pour remaining batter on top.

bake until brown (25-30 minutes) in a 350 degree oven.
