Chicken Parmesan Noodle Bake

This has become a favorite for adults and kids in our house. It is as easy as spaghetti, but the extra time in the oven really set the flavors. We cook it with mushrooms, but I’m the only one that will eat them. So, I chop the mushrooms big enough that others can set them aside for me.

ingredients

  • 1/4 cup chopped onion
  • 1 3/4 cup (14 oz can) chopped tomatoes – undrained
  • 1 1/2 tsp Italian seasoning
  • 1/2 cup mushrooms (optional)
  • 1/4 cup parmesan cheese
  • 1 1/2 cups cooked chicken
  • 2 cups hot, cooked noodles, drained

    Preheat oven to 375 degrees F

    Spray 8x8 pan with cooking spray

    Prepare noodles

    In large skillet, sauté onion in olive oil for 5 minutes.

    Stir in tomatoes (with juice), Italian seasoning, and mushrooms (optional).

    Add parmesan cheese, chicken and noodles.

    Mix together and pour into pan.

    Bake 30 minutes

    Let set for 5 minutes
