Spinach Lasagna
ingredients
- 8 lasagna noodles, cooked
- 1 lb fresh spinach, steamed*
- 1 cup zucchini, sliced & sauteed in butter
- 1/2 onion, chopped
- 1 clove garlic, chopped
- 2 cups sliced mushrooms
- 1 15oz can tomato sauce
- 1 6oz can tomato paste
- 1 small can sliced olives,drained
- 1 1/2t oregano
- salt and pepper
- 2 cups ricotta or cottage cheese
- 1 lb Monterrey jack, shredded
- 1/4 cup Parmesan, grated
