Spinach Lasagna

ingredients

  • 8 lasagna noodles, cooked
  • 1 lb fresh spinach, steamed*
  • 1 cup zucchini, sliced & sauteed in butter
  • 1/2 onion, chopped
  • 1 clove garlic, chopped
  • 2 cups sliced mushrooms
  • 1 15oz can tomato sauce
  • 1 6oz can tomato paste
  • 1 small can sliced olives,drained
  • 1 1/2t oregano
  • salt and pepper
  • 2 cups ricotta or cottage cheese
  • 1 lb Monterrey jack, shredded
  • 1/4 cup Parmesan, grated

*Trade out for frozen, thawed and squeezed dry to make things easier.
