Stuffed Jumbo Shells
This recipe takes a little time to make but is sure worth the effort.
ingredients
- 3 lb ground chuck
- 2-3 (12 oz) cans mushrooms drained and finely chopped
- 6 cloves chopped garlic or 2 tsp garlic powder
- 3 onions chopped
- 3 Tbs Italian seasoning
- 1 lb Mozzarella cheese shredded
- 3-4 eggs beaten
- 1 to 2 pkg jumbo shells
- 2 jars Ragu spaghetti sauce
- grated Parmesan

Saute ground chuck, mushrooms, garlic, onion, and seasonings. Drain grease. Add mozzarella while hot and stir well. Let cool.

Once cool, preheat oven to 350 degrees.

Stir in beaten eggs. Cook shells in water no more than 10 minutes (should still be firm as they will soften more in the oven.) Run under cold water to cool. Drain. Handle easy. Stuff shells with ground chuck mixture. and place in single layer in 9 x 12 dish. Use broken shells over and around.

Pour Ragu over top. Sprinkle with Parmesan. Bake at 350 degrees for 30 minutes. Makes 2 full pans.
