Nicole’s version of an Italian Classic-Seafood pasta

ingredients

  • 1 lb. Linguine
  • 2 cloves garlic-chopped
  • 1 lb. peeled shrimp
  • 1 lb. cleaned clams
  • 1/2 lb. salmon cut into cubes
  • 1/2 lb. cleaned calamari
  • 1 box frozen and thawed box of artichoke hearts
  • olive oil
  • 1 cup basil leaves
  • 1/2 c. chopped parsley
  • 1/2 c. white wine
  • 3 tomatoes cubed
  • salt and pepper
  • Juice from 1 lemon
  • 1 c. reserved cooking water from pasta
  • parmasan cheese for the top

directions

    1) Heat pan, add olive oil and cook salmon. Take out of pan and add shrimp. Once pink, remove and add calamari.

    2) Meanwhile boil large pot of salted water for pasta. Cook pasta until Al Dente-8 min.

    3)While pasta is cooking, add olive oil to pan,cook garlic 2 minutes. Add clams and white wine-cook about 5 minutes.

    Add all of the precooked seafood, tomatoes,artichoke hearts, basil, parsley, and lemon juice.

    4) Add pasta and cooking water, stir. Turn off heat. Top with cheese and lemon wedges if desired. If pasta seems “dry” add more olive oil and pasta water.

notes

Any seafood will work, mix it up: mussels, white fish, lobster, etc.
