Twice Baked Potatoes

ingredients

  • 6 Yukon Gold potatoes (about 3 lbs)
  • 2 tbsp olive oil
  • 1/2 tbsp coarse salt
  • 1/2 cup whole milk
  • 4 tbsp unsalted butter
  • 1/4 cup sour cream
  • 3 tbsp chopped fresh chives, plus additional snipped chives for garnish
  • 1/2 cup finely grated Swiss cheese
  • foil

directions

Preheat oven to 400. Cut 6 squares of foil large enough to wrap each potato. Pierce potatoes on all sides with a fork and place each. Follow directions in other twice baked recipe.
