Various versions of the classic favorite

- 4 pie crusts
- 1 pkg boneless, skinless chicken breasts
- 2-4 T butter
- 1 pkg mushrooms
- 1 head broccoli
- 1 8-oz pkg frozen shrimp
- 3 c Gruyere cheese
- 10 eggs
- 3/4 c milk
Prepare quiche ingredients
Preheat oven to 350 degrees. Partially bake pie crusts.
Cut chicken into small cubes and cook in 1-2 T butter. Slice mushrooms and saute in 1-2 T butter. Cut broccoli into bite-sized pieces and steam until cooked. Cook frozen shrimp.
Put quiches together
Combine meats and vegetables in combinations desired in separate bowls: chicken/mushroom, chicken/broccoli, shrimp/broccoli, shrimp/mushroom, or mushroom/broccoli. (If desired, replace chicken or shrimp with bacon or ham, or create more vegetarian options.)
Shred cheese and divide among bowls. Beat eggs, then blend with milk. Add milk/egg mixture to each bowl. Stir mixture in each bowl and pour into pie crust.
Bake for 35 minutes. Let cool for 15 minutes before serving.
I got this recipe from Donna Minch, the wife of a friend at flight school, back in 1980. I've made it many times over the years, though nut much lately. It's really easy and has no onions, which makes my family happy!
