Prosciutto-wrapped Chicken Breasts
This is a surprisingly easy way to jazz up a simple chicken dinner!
ingredients
- 4 boneless skinless chicken breasts
- 4 slices prosciutto
- 2 tbsp extra virgin olive oil
- Dried or fresh rosemary, thyme, basil, and/or cilantro
- Salt and pepper to taste

Preheat oven to 350 degrees

Combine olive oil, herbs, pinches of salt and pepper in a bowl or shallow dish

Add chicken breasts to the mixture, covering each

Coat a large sautee pan with non-stick cooking spray, heat on high until pan is very hot, slightly smoking

Sautee chicken breasts for 2 minutes on each side until brown

Move chicken to a tin foil-covered cookie sheet, place in oven for 10 minutes

While chicken is baking, separate 4 slices of prosciutto and lay each on a paper towel or clean surface

Remove chicken from oven, wrapping each piece in prosciutto, with ends overlapping on the top of each breast

Put chicken back in oven for 5 minutes

Remove and serve either sliced or whole
notes
Try to use very little or no salt in this dish - the prosciutto is salty enough!
