- 4 boneless, skinless chicken breast halves - flattened slightly
- salt and pepper to taste
- 1 cup chicken stock
- 1 cup Brut Champagne
- 1/4 cup dry white wine
- 2 tablespoons minced shallots
- 2 tablespoons Madeira
- 2 tablespoons minced fresh parsley
- 1 tablespoon minced fresh tarragon leaves (1/2 teaspoon dried)
- 2 tablespoons capers (water packed)
