Tequila Pork Chops

  • 4 center cup pork chops
  • 1/2t cumin seeds
  • 1/4 cup butter
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/2 cup tequila
  • 2T lime juice
  • 2t jalepeno, minced
  • salt and pepper

    Trim and discard fat from chops. Wipe with damp towel, then press cumin seeds equally onto both sides of each chop.

    Place 10-12-inch nonstick frying pan over high heat. When hot, add 1T butter and tilt to coat pan. Add chops and turn as needed to brown well on each side, about 6 minutes total. Stir garlic into butter around chops.

    Remove pan from heat. Stir broth, tequila and lime juice into pan. Return to high heat. When liquids boil, reduce heat and simmer until meat is no longer pink in center, about 4 minutes. Keep warm in 200 degree oven.

    Meanwhile, boil pan juices over high heat until reduced to 3 or 4 tablespoons, about 2 minutes.Add remaining butter in a lump and stir until blended. Add jalepenos. Pour sauce over pork. Season with salt and pepper

Never seems to be enough sauce. Hard to get this all done and work on other items for dinner. But it's pretty damn good if you can figure it out.
