Broiled Shrimp with Spring-Herb Pesto
ingredients
- 1 1/2 c flat-leaf parsley leaves
- 1/2 c chopped chives
- 1 clove garlic
- 3 tbsp toasted pine nuts
- 3 tbsp grated parmesan
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1 tbsp olive oil
- 1 1/2 lb peeled large shrimp, tails intact

Preheat broiler. Pulse together parsley, chives, garlic, pine nuts, parmesan, lemon juice, salt and pepper in food processor until well combined; with motor running, pour in olive oil and 2 tablespoons water.

Transfer mixture to a large bowl; add shrimp and toss to coat with pesto. Let stand 10 minutes. Place shrimp in a baking pan and broil 2 minutes; turn all shrimp and broil 1 minute more.
