  • For broth:

  • 1 chicken whole breast with ribs
  • 1 bay leaf
  • 1 onion, coarsely chopped
  • 2-4 cloves garlic, coarsely chopped
  • 1-2 celery stalks, coarsely chopped
  • 1 carrot, coarsely chopped
  • any other root vegetable (leek, fennel, etc) that you need to use up
  • salt and pepper
  • poultry seasoning
  • 8 cups water
  • For soup:
  • 1 bay leaf
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 small onion, chopped
  • meat of chicken, cut up
  • salt and pepper
  • poultry seasoning
  • 1/2 cup rice or egg noodles
  • parsley, chopped
