Lemon Butter Shrimp with Couscous
Sauteed shrimp with lemon, butter, garlic, and spring onions
ingredients
- 3 Tbl Unsalted Butter
- 6 Garlic Cloves
- 1 small yellow onion
- 1 lb of cleaned shrimp
- 4 Spring onions
- 1/4 cup chopped flat leaf parsley
- 1 (14.5oz) cannelini beans
- 2 Tbl lemon juice
- Salt
- Ground black pepper
- Couscous (prepare enough for 4 servings or 1 box of Middle East brand)
directions
Heat large skillet. Add 1 Tbl butter, garlic, and yellow onion. Sautee for 2-3 minutes, add raw shrimp and continue to cook until shrimp begins to turn pink. Add rest of butter, spring onions, parsley, beans, lemon juice, salt, pepper to taste. Cook for 3-5 minutes or until shrimp done.
