Ambrosia Gelatin Mold
ingredients
- 4 (3oz) boxes pineapple gelatin
- 2 cups boiling water
- 2 (13.5 oz) cans of coconut milk
- 1 1/2 cups mini marshmallows
- 1 (15 oz) can mandarin oranges, drained
- 1 (10 oz) jar of maraschino cherries, drained & halved

1) Dissolve gelatin in boiling water in large bowl. Stir in 1/2 cup of cold water and all the coconut milk. Refrigerate, uncovered until slightly set (about 1 hour).

2) Lightly coat mold/bundt pan with non-stick cooking spray. Whisk slightly set gelatin until well blended. Fold in marshmallows, oranges and cherries. Pour entire mixture into mold and refrigerate uncovered for 4 hours.
