Different Flavored Butters
Simply freeze the flavored butters, when needed pull from the freezer, melt and brush on chicken breasts before grilling or broiling.
ingredients
- Garlic Butter:
- 8 tablespoons (1 stick) butter
- 3 large garlic cloves, peeled
- 1 tablespoon olive oil
- 2 tablespoons grated Parmesan Cheese (optional)
- 2 teaspoons fresh chives
- 1 teaspoon fresh basil leaves (or 1/4 teaspoon dried)
- dash of salt & pepper
- Green Herb Butter:
- 3 tablespoons finely chopped parsley(blanched, dried with paper towels, and then chopped)
- 2 tablespoons finely chopped spinach (blanched, dried with paper towels, then chopped)
- 1 tablespoon each chopped fresh chervil, chives, and tarragon (each blanched, dried, then chopped)
- 3 tablespoons shallots, chopped
- 1 stick of butter
- salt & pepper
- Tarragon Butter:
- 4 tablespoons fresh tarragon leaves, blanched, dried, chopped
- 1 stick butter
- salt & pepper
- Lemon or Lime Butter:
- 1 shallot, blanched, dried, chopped
- 2 teaspoons grated lime or lemon zest
- 1 tablespoon finely chopped parsley
- dash of salt
- white pepper
- Orange Spice Butter:
- 1 stick butter
- 2 tablespoons orange marmalade
- 1 tablespoon ground cinnamon
- dash of allspice
- Sweet Curry Butter:
- 1 stick butter
- 2 tablespoons honey
- 1 tablespoon curry powder
- Mustard Butter:
- 1 stick of butter
- 3 tablespoons Dijon Mustard
- 1/2 teaspoon fresh lemon juice
- dash of salt

1. Put the ingredients for whichever flavored butter you are making in a food processor, blender or blend together with a mortar and pestle. Mix well.

2. Freeze in small quantities (2 to 4 tablespoons) tightly wrapped in plastic sandwich bags or plastic wrap. Don’t forget to mark the flavors on the packages.
