Broiled Crab and Potato Patties
ingredients
- 1 lb potatoes
- 1 lb crabmeat
- 3/4 cup finely chopped onion
- 1/2 cup funely chopped parsley
- 3 tbsp minched fresh dill
- 1 tbsp dry sherry
- 2 tbsp low-fat sour cream
- 2 egg whites, beaten
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp ground nutmeg
- 1/8 tsp cayenne pepper
- 3/4 cup fine unseasoned bread crumbs (or panko crumbs)
- olive oil or Pam
- 2 lemons, cut into wedges

Boil whole potatoes until tender When cool enough to handle, peel them and grate them through the large holes of a hand-held grater. Preheat the broiler and lightly oil a broiler rack. In a large mixing bowl, combine the potatoes with the next 11 ingredients. Mix gently to combine. Form the mixture into 12 patties, about 1/2 inch thick. Dredge each patty in the bread crumbs to coat it completely and place on the prepared broiler rack. Spray pam over the tops of patties. Broil until they turn a crusty golden brown, 3-5 minutes. Turn the patties over, and repeat. Serve with lemon wedges.
