Speedy Chicken (or beef) Enchiladas
This is a fairly new recipe but it always makes a big hit and it’s pretty healthy.
ingredients
- 2 T. vegetable oil
- 1 19 oz. can enchilada sauce
- 1 14.5 oz. can tomatoes with jalapenos
- 1 tsp. fajita seasoning or chili powder
- 3 C. cooked chicken or 2# ground beef
- 1 medium onion, chopped
- 1 16 oz. can black beans, rinse, drain
- 1 11 oz. can Mex-style corn, drained
- 1 10 oz, pkg 6" corn tortillas
- 3 C. shredded Mex. cheese

Heat oil in large skillet and saute onion til soft. Stir in enchilada sauce, tomatoes, beans, corn and seasoning. Cook on low for 5 min. or until heated through.

Heat oven to 350*. Spoon 1/3 of sauce into a lightly greased 9 x 13" pan (I actually use my 9 x 9 Pampered Chef baker and make and extra layer). Layer with tortillas(whole wheat works well) 1/2 of meat, and 1 C of cheese. Repeat layers with 1/3 of sauce, remaining meat, 1 C cheese and top with a layer of tortillas and remaining cheese.

Bake @ 350 for 15 to 20 min. until bubbly. (30 min. in deeper pan.)
