HONEY BRAN MUFFINS WITH FIGS

This lighter version Bran Muffins with Figs is from Weight Watchers. They have a lovely tender texture. They freeze nicely!

ingredients

  • 2 1/2 cup(s) white all-purpose flour
  • 2 cup(s) uncooked wheat bran, Toasted
  • 2 tsp baking soda
  • 1 1/2 tsp table salt
  • 3/4 cup(s) dried stewed figs, chopped
  • 1 cup(s) water, Boiling
  • 1 stick(s) unsalted butter, room temperature
  • 1 tbsp sugar
  • 1/2 cup(s) honey
  • 2 large egg(s)
  • 2 cup(s) buttermilk

    Preheat oven to 400F.

    Line 24 muffin cups with muffin papers.

    Stir flour, baking soda and salt in small bowl to blend.

    Combine bran and figs in another bowl; mix in 1 cup boiling water.

    Beat butter in large bowl until creamy.

  • 6

    Gradually beat in sugar, then honey.

  • 7

    Beat in eggs 1 at a time.

  • 8

    Beat in buttermilk alternately with flour mixture in 3 additions each.

    Mix in bran mixture.

  • 10

    Divide batter among lined muffin cups.

  • 11

    Bake muffins until tester inserted into center comes out clean, about 20 minutes.

    Turn muffins out onto racks and cool completely.
