Baked Vegetable Wontons
ingredients
- Soy and Ginger Dipping Sauce:
- 1 c water
- 1/2 c dried mango
- 1 T soy sauce
- 2 T mirin (sweet rice wine)
- 1 T rice vinegar
- 1 t finely grated ginger
- 1/4 t chili paste
- Vegetable Wonton Filling:
- 1 c grated carrot
- 1/2 c thinly sliced shitake, oyster mushrooms, or button mushrooms
- 1 c finely shredded napa cabbage (about 1/4 head)
- 2 T roasted sesame oil
- 1/4 c chopped scallions or green onions
- 1/2 T freshly grated ginger
- 1/2 T curry powder
- 1 T mirin
- 1 T soy sauce
- 1 package 30 small, square wontons (uncooked)
- 1/2 c toasted sesame oil (for brushing)

Make the Dipping Sauce first:

Boil water, pour over dried mango and let sit for about 30 minutes or until fruit softens. Strain water and use 1/2 cup of fruit-flavored water as a base for the sauce. Add the soy sauce, mirin, rice vinegar, ginger, and chili paste.

Preheat oven to 375.

Make the filling:

Saute carrot, mushroom, and cabbage in the sesame oil in a large saute pan over medium heat, until limp, about 5 minutes. Add the scallions and ginger. Sprinkle the vegetables with curry powder, then stir in the mirin and soy sauce. Remove from the heat.
Lay out 12 wonton sheets at a time on a clean surface and with a pastry brush, lightly brush all along the edges of the sheet using some of hte sesame oil. You will be folding the sheet at an angle, so drop 1 tablepoon of the vegetable mixture a touch off the center of the diagonal fold so you can close the wonton. After the filling is in place, fold 1 corner of the sheet over to the opposite corner. Press the 2 sides of the wonton down with a fork to seal it. Fold in the 2 pointed edges, which jut out fromt he folded side of the triangle. Brush the tops with sesame oil. Repeat this process for the remaining wonton sheets. Put the stuffed wontons on a baking sheet lightly greased with olive or grapeseed oil and brush the tops of the wontons with the remaining seseame oil. Bake for 6 minutes, turn them over, and continue baking until the tops are brown, about another 6 minutes.

Tips: Wontons can keep in the refrigerator for up to 3 months. Wrap about 5 in wax paper, then seal package tight with plastic wrap. All you need to do is heat them up for a few minutes in the oven and eat!
