Shrimp Provencale

ingredients

  • 3 TBSP Olive oil
  • 2 lbs large shrimp, cleaned and deveined
  • 1 lb mushrooms, sliced
  • 2 garlic cloves, minced
  • 3 medium sized tomatoes, diced
  • 2 TBSP lemon juice
  • 3/4 tsp salt
  • 1/8 tsp pepper
  • 2 TBSP chopped parsley
  • Crumbled feta cheese

    In large skillet over medium heat, add olive oil and cook shrimp. Stir frequently until shrimp turn pink (about 3-5 minutes). Remove shrimp from pan and set aside.

    In same skillet, add 1 more TBSP olive oil. Add mushrooms and garlic. Cook until mushrooms are tender (about 3 minutes), stirring occasionally. Add tomatoes, lemon juice, salt and pepper. Cook 3 minutes more.

    Return shrimp to skillet. Heat through. Sprinkle with parsley and crumbled feta cheese. Serve with rice.

Can use 1 can DelMonte diced tomatoes
