Caper-Tarragon Vinaigrette
ingredients
- 3 tablespoons red-wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon minced garlic
- 6 tablespoons extra-virgin olive oil
- 1 tablespoon chopped fresh tarragon
- 1 tablespoon drained bottled capers
directions
Whisk together vinegar, mustard, garlic, 1/2 teaspoon of salt, and 1/8 teaspoon pepper. Gradually whisk in oil in a slow stream until emulsified, then whisk in tarragon and capers. Season with salt and pepper.
