Potato Souffle
ingredients
- 4 tbsp butter
- 1 small onion -- chopped
- 1/4 C flour
- 1/4 tsp. salt
- 1 1/4 C milk
- 12 oz cheese -- American, Muenster, Cheddar
- 10 - 12 potato blintzes
directions
Saute the onion in the butter, and then add the flour, salt & milk to form a roux. Add the cheese and mix until it is melted. Place the potato blintzes in one layer in a greased 9 x 13 pan, then pour the cheese mixture over the blintzes. Bake at 350 for 40 minutes.
