Artichoke Gratinata
McKenzie and Aida love this without knowing they’re eating their vegetables.
ingredients
- 3 TBSP Olive Oil
- 1 Garlic Clove
- 1 Pound Artichoke Hearts
- 2 TBSP Chopped Parsley
- 3/4 TSP Salt
- 1/4 TSP Fresh Ground Black Pepper
- 1/8-1/4 TSP Red Pepper Flakes
- 1/2 Cup Chicken Broth
- 1/4 Cup Marsala Wine
- 2 TBSP Butter
- 1/3 Cup Plain Bread Crumbs
- 1/3 Cup Grated Parmesan

Preheat Oven to 450 Degrees F.

Warm the Olive Oil in a heavy bottom skillet over med-high heat. Add the garlic and cook for one minute. Add the Artichoke hearts, parsley, salt, pepper, and red pepper flakes and cook until the artichoke hearts start to brown at the edges, about three minutes. Add the chicken broth and wine and simmer for 15-20 minutes. In a separate bowl melt the butter in microwave. Add he bread crumbs and Parmesan to the butter. Transfer Artichoke mixture to casserole dish and top with bread crumbs and Parmesan. Place in Oven and Bake for 15-20 minutes or until top begins to brown.
