Joe's Quick Pineapple Cheesecake

ingredients
- 1 Prepared Graham Cracker Crust
- Filling:
- 8 ounces cream cheese
- 2 eggs
- 1/4 cup orange juice
- 1/4 cup sugar
- 1 Tbsp flour
- 1 tsp vanilla extract
- 1/2 tsp grated orange
- 1/8 tsp salt
- Topping:
- 1 tsp unflavored gelatin
- 12 ounce can pineapple tidbits
- Juice from pineapple tidbits

Filling:

Mix all filling ingredients in blender. Pour in crust. Preheat oven to 350 degrees. Cook 20-30 minutes or until set. Chill.

Combine gelatin and pineapple juice in small saucepan. Warm over low heat until gelatin dissolved. Place pineapple over pie and pour juice on top. Chill 1 hour or more until gelatin set.
