Lemon-Vegetable Couscous
ingredients
- 2 1/4 cups water
- 1 10 ounce box couscous (about 1 1/2 cups plus 2 tablespoons) uncooked
- 1 1/3 cups chopped seeded tomato (about 1 large)
- 1 cup coarsely chopped seeded peeled cucumber
- 1 cup thinly sliced green onions
- 1/2 cup finely chopped parsley
- 1/4 cup finely chopped fresh mint
- 1/2 cup fresh lemon juice
- 2 tablespoons water
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper

Bring water to a boil in a medium saucepan; stir in couscous. Remove from heat. Cover and let stand 5 minutes

Combine couscous, tomato, cucumber, onions, parsley and mint in a large bowl.

Combine lemon juice, water, oil, salt and pepper; stir well with a whisk. Pour over couscous and toss.

Could also add black olives and crumbled feta cheese.
