Lemon-Vegetable Couscous

ingredients

  • 2 1/4 cups water
  • 1 10 ounce box couscous (about 1 1/2 cups plus 2 tablespoons) uncooked
  • 1 1/3 cups chopped seeded tomato (about 1 large)
  • 1 cup coarsely chopped seeded peeled cucumber
  • 1 cup thinly sliced green onions
  • 1/2 cup finely chopped parsley
  • 1/4 cup finely chopped fresh mint
  • 1/2 cup fresh lemon juice
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

    Bring water to a boil in a medium saucepan; stir in couscous. Remove from heat. Cover and let stand 5 minutes

    Combine couscous, tomato, cucumber, onions, parsley and mint in a large bowl.

    Combine lemon juice, water, oil, salt and pepper; stir well with a whisk. Pour over couscous and toss.

    Could also add black olives and crumbled feta cheese.
