Waikiki Salad
Pineapple, celery, and walnuts make this chicken salad unique.
ingredients
- 1 can (20 oz.) pineapple chunks in juice, drained
- 1 pound boneless chicken breast, cooked and diced
- 2 cups celery, diced
- 1/2 cup walnuts, chopped
- 1 cup Hellman’s mayonnaise
- 3/4 teaspoon salt
- 1 teaspoon lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon celery salt
- 1 teaspoon sugar
directions
Combine pineapple, chicken, celery, and walnuts in a large bowl; set aside. In another bowl, combine mayonnaise, salt, lemon juice, lemon zest, celery salt, and sugar. Pour over chicken and pineapple, gently fold in; cover and chill.
