Pork chops and potato casserole

Great pressure cooker recipe

  • 2 tlbs evoo

  • 4 pork chops

  • ¼ cup chicken stock

  • 3 medium potatoes-sliced

  • 1 apple-sliced

  • 1 medium onion-sliced

  • 3 bay leaves

  • ½ tsp nutmeg

  • salt and pepper

  • Heat the oil in pressure cooker. Sprinkle the chops with the salt and pepper and brown in pot. Remove to a warm platter. Add the stock to the pressure cooker, scraping up any stuck particle. Layer half of the potatoes, and onions, and apples slices in the cooker. sprinkling with salt and pepper and nutmeg. Place a bay leave on top and add pork chops.

  • Layer the remaining ingredients and season with salt and pepper and nutmeg and bay leaf.

  • Lock lid in place and bring to pressure, use high setting. and cook for 19 min. Let pressure drop by quick release method.
