Year Round Broccoli
From the Applehood and Motherpie cookbook, this is similar to Brenda’s cheesy carrots!
ingredients
- 1 lb fressh broccoli or 2 (10 oz) packages of frozen, cut broccoli
- 3 medium onions, quartered
- 3 TBSP butter or margarine
- 2 TBSP flour
- 1/4 tsp salt
- 1 cup warm milk
- 1 (3 oz) package cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/2 cup bread crumbs

Cut broccoli into 1" pieces. Cook in boiling water until crisp-tender. Drain.

Cook onions in boiling water 5 minutes, drain.

In saucepan melt 2 TBSP butter, blend in flour and salt. Add milk, cook and stir until bubbly and thick.

Reduce heat, and blend in cream cheese until smooth..

Place vegeateables in 1 1/2 quart casserole. Pour sauce over. Mix very lightly.

Top with shredded cheese (can be made a day ahead here and refrigerated)

Melt remaining TBSP of butter and mix with breadcrumbs. Set aside.

Bake casserole covered for 30 minutes at 350 degrees. Remove from oven, sprinkle with bread crumbs and bake uncovered 30 minutes more.
