Hot Broccoli Dip

Makes 1 quart

ingredients

  • 1/2 Cup chopped onion
  • 1/2 Cup chopped celery
  • 1/2 Cup chopped mushrooms
  • 3 TBSP butter (sweet unsalted)
  • 1 Pkg. frozen chopped broccoli, cooked & drained
  • 1 Can condensed mushroom soup
  • 1 Pkg. (6 oz)garlic cheese diced or other cheese + chopped garlic
  • Generous squeeze lemon juice

directions

  • 1

    Saute onion, celery, mushrooms in butter until tender. Add broccoli. Mix in soup & cheese.

  • 2

    Cook over low heat until cheese is melted and well blended.

  • 3

    A squeeze of lemon juice helps to retain green color.

  • 4

    Serve in chafing dish.

This is an ancient one from my days in NY. Haven't made it in years, but it's right up your alley.
