Coconut Curry Chicken Soup
A rich and spicy soup that is really quick and easy to make
ingredients
- 2 cups chicken broth
- 1 (14-ounce) can coconut milk
- 1/2 tablespoon hot curry powder
- 2 boneless skinless chicken breast halves, cut into 3/4-inch pieces
- 3 tablespoons fresh lime juice (about 1 large lime)
- 1/4 cup chopped green onion
- 1/4 cup chopped fresh cilantro
- 1 cup freshly cooked white rice
- 1 teaspoon salt, or to taste

Bring chicken broth, coconut milk and hot curry powder to simmer in heavy medium saucepan over medium heat.

Add cooked chicken, stirring occasionally

Remove from heat and add the lime juice, onion, cilantro, rice and salt
notes
I use low-fat coconut milk (60% less fat and calories) and the taste is still great
