Breakfast Bread Pudding

ingredients

  • 5 XL eggs
  • 2 XL egg yolks
  • 2 1/2 c half and half
  • 1/3 c honey
  • 1 1/2 tsp vanilla
  • zest of 2 oranges
  • 1/2 tsp kosher salt
  • Brioche loaf
  • maple syrup to serve

directions

    Preheat oven to 350 degrees. In a medium bowl, whisk together eggs, yolks, half and half, honey, vanilla, zest, and salt. Set aside.

    Slice bread into 1-inch thick pieces. Lay slices flat in a 9x13x2 oval baking dish. Pour egg mixture over the bread and allow to soak for 15 minutes, pressing down gently.

    Bake for 55-60 minutes or until pudding puffs up and custard is set. Remove from oven and cool slightly before serving.

notes

This is great for breakfast with some bacon or sausage. Another variation is to sprinkle with powdered sugar, or top with berries and whipped cream.
