Pasta Shish Kebab

A great nibbler for casual parties. Also, you can skip putting these on kebabs and serve it as a salad. I served this at Mike’s 25th birthday party. The next morning when we woke up it was the best hang-over cure!

ingredients

  • 1 (12 to 16 ounce) package of frozen tortellini
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 olive oil
  • 3 tablespoons fresh chopped parsley
  • 1-2 cloves of fresh chopped garlic
  • 1 1/2 teaspoons of oregano
  • 1/8 teaspoon of black ground pepper
  • 1 sliced or cubed red pepper
  • 1 sliced or cubed green pepper
  • 1 (8 ounce) package cubed mozzarella cheese

directions

  • 1

    Cook tortellini according to package directions. Do not overcook.

  • 2

    To make dressing, mix lemon juice, olive oil, parsley, garlic, oregano, and black pepper in a small bowl.

    Immediately place hot pasta into dressing so flavors will be absorbed.

    Add peppers and cheese and marinate for 24 hours (I rarely marinate this long).

    Either serve as a salad or place one of each ingredient on skewers for hors d’oeuvres.

    Refrigerate until ready to serve.

notes

If you want to eat this the next day, you may have to add a little EVOO, as it can dry out a little.
