Red Cabbage
ingredients
- 1 head red cabbage (about 3 1/2 lbs)
- 1/4 lb bacon diced 1/2"
- 1 1/2 cup onion sliced thin
- 3/4 cup apple juice
- 1/2 cup red wine vinegar
- 1/2 tsp black pepper
- 2 fresh garlic cloves (minced)
- 1 tbsp beef base
- 2 tbsp brown sugar
- 1/2 cup red wine
- 1 red apple, peeled and diced 1/2"

Core and cut cabbage into quarters. Slice each quarter thinly. In a stockpot saute bacon until brown and crispy. Add onion and saute until clear and tender.

Add cabbage and other ingredients (except apples). Stir well, making sure nothing is sticking to the bottom of the pot.

Cover and cook on low heat 30 minutes stirring gently and often.

Add apple and cook for 15 minutes longer.
