Greek Salad Sandwich
ingredients
- 1 clove garlic
- 1/4 cup Light Mayonnaise
- 1 tsp Greek Seasoning (optional)
- Juice of 1 fresh lemon
- 1 tablespoon red wine vinegar
- Salt and freshly ground black pepper
- 1 cucumber, thinly sliced (or diced)
- 1 cup tomatoes, diced
- 1 small can black olives
- 1 small onion diced
- 1/2 cup crumbled feta
- 1/4 head of lettuce, thinly sliced
- 3 tablespoons parsley
- 4 pita pockets or flat bread

Combine garlic,light Mayonnaise, lemon juice, red wine vinegar and salt and pepper in a medium bowl. Slowly whisk

Combine the cucumber, tomatoes, onion, feta, romaine and parsley in a bowl, add some of the dressing and toss to coat, season with salt and pepper.

Heat the flat bread either in the stove or microwave.

Spread some of the dressing over the surface of the bread, top with some of the salad, roll and eat or serve open face on a large plate.
