Chai Nut Tea Bread
ingredients
- 3/4 c. sugar
- 1/2 c. butter, softened
- 2 eggs
- 1 cup evaporated milk, hot & steaming
- 2 black tea bags
- 2 c. flour
- 2 t. baking powder
- 1/2 t. cinnamon
- 1/2 t. cloves
- 3/4 t. cardamom
- 1 T orange zest
- 2 t. vanilla
- 2/3 c. chopped candied ginger
- 1 c. chopped and toasted hazelnuts
- Glaze:
- 1 c. powdered sugar
- 1 t. vanilla
- 2 T. orange juice
- 1 t. cinnamon
- Optional:
- 1/4 c. finely chopped hazlenuts

Preheat oven to 400 degrees.

Steep teabags in 1 cup hot milk for 20 minutes, or until slightly cool (you can finish the last 5 minutes in the fridge if that is helpful).

Cream butter and sugar for 3 minutes. Remove the teabags from the milk. Add milk, eggs and vanilla. Mix the ingredients on low. Add in all the remaining ingredients. Mix until moistened.

Pour batter into a greased 9 inch loaf pan.

Bake at 400 degrees for 50-60 minutes, or until a toothpick inserted comes out clean.

Allow to cool 10 minutes on a baking rack, allow an additional 30 minutes of cooling before glazing.

For glaze:

Combine all glaze ingredients in a bowl and mix until well combined and smooth. Spread the glaze on the top of the loaf. Sprinkle with additional chopped hazlenuts.

Allow to rest for 2 hours before slicing and serving.
