A simple one pan meal with Beer as the secret ingredient

ingredients

  • 1 Cup Valencia (short grain) Rice
  • 1 1/2 lb chicken thighs (or breast cut into large pieces)
  • 4 Tbl Canola oil
  • 5 Garlic cloves, crushed/chopped
  • 1 Medium red onion sliced, 1 cup
  • 2 Cups fat free low salt chicken broth
  • 2 Cups tomato sauce
  • 2 Cups beer
  • 1 Tsp Saffron threads
  • 1 Tbl Sugar
  • 1/2 Cup drained sliced Pimentos
  • 2 Cups frozen peas
  • Salt and Pepper

Valencia style rice, is a short grain rice. Italian Arborio rice used in Risotto may be used.
