Drunken Chicken and Rice
A simple one pan meal with Beer as the secret ingredient
ingredients
- 1 Cup Valencia (short grain) Rice
- 1 1/2 lb chicken thighs (or breast cut into large pieces)
- 4 Tbl Canola oil
- 5 Garlic cloves, crushed/chopped
- 1 Medium red onion sliced, 1 cup
- 2 Cups fat free low salt chicken broth
- 2 Cups tomato sauce
- 2 Cups beer
- 1 Tsp Saffron threads
- 1 Tbl Sugar
- 1/2 Cup drained sliced Pimentos
- 2 Cups frozen peas
- Salt and Pepper

Valencia style rice, is a short grain rice. Italian Arborio rice used in Risotto may be used.
