Sausage and Tortellini Soup
ingredients
- 1 lb hot turkey sausage, remove casings
- 1 large onion, chopped
- 5 garlic cloves, chopped
- 5 cups chicken broth
- 2 cups tomatoes, chopped
- 1 large zucchini, halved & sliced
- 1/2 cup dry white wine
- 1 cup kale, chopped
- 1 lb cheese tortellini
- 1 8-oz can tomato sauce
- 1 red bell pepper, diced
- 1 tbsp dried basil
- 1 tbsp dried oregano

-Saute sausage in soup pot (med high heat) until cooked through. Using slotted spoon, transfer meat to bowl. Keep 1 tbsp of liquid.

-Add onion & garlic and saute until translucent.

-Return sausage to pot and add stock, tomatoes, tomato sauce, zucchini, bell pepper, kale, wine, basil, & oregano.

-Simmer until vegetables are tender (about 40 mins).

-Cook tortellini per instructions. Keep separate from soup to prevent sogginess.

-Serve soup over tortellini. Sprinkle with parmesan.
