John Legend's Macaroni and Cheese

This is a really good mac & cheese recipe. I saw it on made on Martha Stewart.

ingredients

  • 1/2 stick butter
  • 3 cups elbow macaroni
  • 2 (12 ounce) cans evaporated milk
  • 1/3 cup skim milk
  • 2 large eggs
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon garlic powder
  • 2 (8 ounce) packages extra sharp cheddar cheese
  • 1 (8 ounce) package Monterrey Jack cheese
  • Salt and pepper
  • Paprika

    Preheat oven to 375°. Generously butter a 13x9 in baking dish. Cook macaroni and drain. Add butter and toss. Set aside.

    In a medium bowl, whisk together evaporated milk, skim milk and eggs. Add seasoned salt, garlic powder 1 teaspoon salt, and 1/2 teaspoon pepper. Set aside. In another bowl, combine cheeses and set aside.

    Place 1/3 of macaroni in dish. Cover with 1/3 cheese. Repeat again. Pour milk mixture evenly over macaroni. Sprinkle with paprika. Bake until top layer is lightly browned, 35-45 minutes. Let set 10 minutes before serving.

notes

I feel too guilty using the evaporated milk, so I just use regular milk for the whole thing. But I'm sure it would be better if you just followed the recipe.
