Quick Spaghetti
ingredients
- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1/2 to 1 teaspoon dried oregano or 1 tablespoon fresh oregano
- 1/2 to 1 teaspoon dried basil or 1 tablespoon fresh basil
- 2 28 ounce cans crushed tomatoes
- 1 bay leaf
- 1 1/4 teaspoons salt
- 1 teaspoon sugar, to taste
- 1/3 cup chopped fresh flat leaf parsley, optional
- Additional salt and fresh ground pepper, to taste
- Shredded Parmesan cheese
- 1 pound of cooked spaghetti
directions
Heat oil in a 5 quart pot over moderately high heat until hot, but, not smoking. Add onions and cook stirring until golden, about 6 minutes. Add oregano, basil and cook, stirring 1 minute. Add tomatoes, bay leaf, salt and sugar, bring to a simmer. Simmer uncovered, stirring occasionally, until thickened, 30 to 35 minutes. Discard bay leaf and stir in parsley, if using. Toss with cooked spaghetti. Serve with Parmesan cheese.

Optional additions: 1 pound turkey Italian sausage 2 cans of chopped artichokes 1 pound lean ground beef
