Banana Banana Bread
This is the best banana bread I have ever tried. The key is to not overmix, or the bread will turn out dry and crumbly, as Dan learned when he attempted this on his own.
ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice or nutmeg
- 1/2 cup butter softened
- 1 cup brown sugar or if desired, 1/2 cup granulated sugar and 1/2 cup brown sugar
- 1 teaspoon vanilla
- 2 eggs, beaten
- 2 1/3 cups mashed overripe bananas (about 5-6 bananas)

Preheat oven to 350 degrees. Lightly grease a 9x5 inch loaf pan.

In a large bowl, combine flour, baking soda, salt, and spices. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Bake in preheated oven for for 65-75 minutes, or until a toothpick inserted into the center comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Tastes excellent with a streusal of some sort on top! If the top of the bread starts getting too dark, place some aluminum foil over the top to slow down the browning.
