Pumpkin Bread

Judy HigginsJudy Higgins

My neighbor, Lola, made this at Thanksgiving. She also poured more brandy mixed with powdered sugar on top of bread before serving. I don’t usually like pumpkin, but this is very good!

  • 1 2/3 c. sifted flour
  • 1/4 tsp. baking powder
  • 1 tsp. soda
  • 1/8 tsp. salt
  • 1/2 tsp. cloves
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1/2 tsp. vanilla
  • 1/3 c. shortening
  • 1 1/3 c. sugar
  • 2 eggs
  • 1 c. mashed pumpkin
  • 1/3 c. brandy
  • 1 c. nuts, chopped

Cream together shortening and sugar. Add eggs and brandy; set aside. In bowl combine all dry ingredients. Combine all dry ingredients with all wet ingredients. Add nuts. Pour into greased and floured loaf pan. (Makes 1 large loaf or 4 mini loaves.) Bake at 350 degrees for 1 hour in large loaf; 45 minutes for mini loaves. Optional: Pour 3 tablespoons brandy over bread while warm out of oven.
