Vegetable Strata

A great recipe for extra bread and any seasonal vegetables

ingredients

  • 2 cups soft bread cubed
  • 2 cups baked squash or minced, sauteed chard or kale
  • 1 cup grated cheese
  • 1 cup milk or cream
  • 2 eggs, beaten
  • 3 tblsp chopped onion or shallot
  • 2 tblsp diced pimento or red pepper
  • 2 tblsp minced parsley
  • 3 tblsp melted butter or olive oil
  • salt and pepper to taste

directions

    Scald milk and add bread cubes.

  • 2

    Stir in squash, egg and cheese.

  • 3

    Mix in rest of ingredients.

  • 4

    Placed in oiled casserole pan.

  • 5

    Bake uncovered for approx 45 minutes or until golden and puffy.
