Greek Frittata
ingredients
- Greek Seasoning
- Olive Oil
- 6 eggs
- 1 onion sliced
- frozen spinach thawed and squeezed dry
- 1 pint sliced mushrooms
- feta cheese
- oven safe deep pan

Preheat oven to 350 degrees

Add olive oil to medium oven safe pan over medium heat.

Crack and scramble all eggs and set aside.

Sauté onions and garlic until translucent. Add Greek seasoning.

Add spinach, salt and pepper continue to cook for 3-5 minutes.

Add mushrooms and cooke until all water has evaporated.

Turn off heat, add eggs and feta cheese and put in oven for 10-15 minutes.
