Cream of Mushroom Soup
ingredients
- 5 Tbsp butter
- 1 small onion, chopped
- 1 1/4 lb mushrooms, chopped
- 2 Tbsp flour
- 3 cups chicken broth or water
- salt and pepper, to taste
- 1 cup 15% cream or 2% milk

Heat butter in a large saucepan

Saute onions 3 minutes

Add mushrooms

Saute 5 more minutes

sprinkle with flour; stir

Add chicken broth

Bring to a boil, always stirring

Season salt and pepper

Simmer for 30 minutes

Be sure mixture is not boiling any more before you add the cream, otherwise it will curdle

Stir in cream and serve
