Smothered Swiss Steak
ingredients
- 1/2 tsp. salt
- 6 4 oz. cube steaks
- 1/2 c. all-purpose flour
- 1 tsp. pepper
- 4 1/2 Tb. vegetable oil
- 1 medium onion, diced
- 1 medium green pepper, diced
- 1 14.5 oz. can petite diced tomatoes
- 1 12 oz. cola soft drink
- 1 Tb. beef bouillon granules
- 2 Tb. tomato paste
directions
Sprinkle salt evenly on both sides of cube steaks. Combine flour and pepper in a shallow dish. Dredge steaks in flour mixture. Brown 2 steaks in 1 1/2 Tb. hot oil in large nonstick skillet over medium-high heat 3 minutes on each side; drain on paper towels. Repeat procedure with remaining steaks and oil. Drain drippings from skillet, reserving 1 Tb. in skillet. Saute onion and bell pepper in hot drippings 7 minutes or until tender. Add diced tomatoes and next 3 ingredients to skillet. Bring to a boil, and cook, stirring often 5 minutes or until slightly thickened. Return steaks to skillet; cover and cook over low heat 55-60 minutes or until tender.

To prepare in slow cooker, place seared steaks in slow cooker. After cola mixture has cooked 5 minutes, spoon it over seared cube steaks. Cover and cook on LOW 5 hours. I recommend the slow cooker method.
