Chocolate Chip Pecan Meringues

Makes 3 dozen cookies

ingredients

  • 2 egg whites
  • 1/8 teaspoon salt
  • 1/8 teaspoon cream of tartar
  • 3/4 cup sugar
  • 6 oz semisweet chocolate morsels
  • 2/3 cup chopped pecans
  • 1 teaspoon vanilla extract

directions

Beat egg whites (at room temperature) with salt and cream of tartar until foamy. Gradually add sugar, beating until stiff peaks form. Fold in chocolate chips, pecans, and vanilla. Drop mixture by heaping teaspoonfuls 2 inches apart onto parchment-lined cookie sheets. Bake at 400 degrees F for 25 minutes. Remove from parchment, using a sharp spatula, and cool on wire racks. Store in airtight containers.
