Fish & Chips
  • 2 Fish Fillets or Small Whole Fish - cleaned, gutted and scaled
  • 2 tsp Green Peppercorns, crushed
  • 2 tsp Red Chilli, chopped
  • 3 tsp Fish Sauce
  • 4 Large Potatoes, cut into wedges
  • Spices and Herbs of choice to season
Onion Salsa
  • 1 Medium Onions, thinly sliced
  • 2 Shallots, thinly sliced
  • 2cm peice Ginger, thinly sliced
  • 2 Garlic Cloves, thinly sliced
  • 2 tsp Sugar
  • 2 Spring Onions, finely shredded
Lemon and garlic Dipping Sauce
  • 30ml Lemon Juice
  • 1 TBS Fish Sauce
  • 3 tsp Sugar
  • 1 Red Chilli, finely chopped
  • 1 Garlic Clove, finely chopped
