Karyn's Breakfast Quiche

A cheesy egg dish with smokey bacon and tender hash browns.

ingredients

  • 1 package frozen hash browns (recommended: Ore-Ida)
  • 1/3 cup butter, melted
  • 1 package bacon, cooked and crumbled/torn
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup monterey jack cheese, shredded
  • 4 eggs
  • 1 cup heavy whipping cream
  • 1 tsp Mrs. Dash seasoning
  • 1/2-1 tsp Johnny’s Seasoning salt

    Preheat oven to 425°

    Place hash browns in the bottom of a pie dish and pour melted butter on top. Sprinkle with pepper. Press the mixture intothe bottom and sides of the pan. Bake for 25 minutes.

    Remove from oven and arrange crumbled bacon and shredded cheeses evenly over the potatoes. In a separate bowl, beat together the eggs, cream, Mrs. Dash and Johnny’s. Pour over the bacon, cheese and potatoes.

    Return pan to oven and bake for 30 minutes, or until egg mixture has completely set.

notes

You can easily make this dish vegetarian! Instead of bacon add sliced red, yellow and/or orange peppers. Cooking time will be a little longer as the peppers add moisture to the dish. Top with chopped green onion for an extra fresh kick!
