Crostini
Crostini, an Italian appetizer, is crusty bread with different delicious toppings. Here we’ve highlighted fresh tomatoes, basil and mozzarella.
ingredients
- 12 slices Italian bread, each 1/2 inch thick
- 1/4 cup olive or vegetable oil
- 1 large tomato, chopped (1 cup)
- 3 tablespoons chopped fresh basil leaves
- 1 tablespoon large capers or chopped ripe olives
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 12 slices (1 ounce each) mozzarella cheese

Prepare and refrigerate tomato topping up to 24 hours ahead. Assemble crostini for baking no longer than 1 hour ahead or the bread will get soggy
